Apple Bake
4 large apples, diced (peeled, if desired)
½ cup apple juice or cider
½ cup water
½ tsp. cinnamon
¼ tsp. nutmeg
½ tsp. vanilla
Rinse apples under running water. Combine juice or cider with water and spices. Put apples in loaf pan; pour liquid over apples.
Bake at 350 degrees for 45 minutes or microwave on high for 10-12 minutes. If micro waving, stir every 4 minutes.
Serves 4-6.
Cantaloupe Salad Bowl
1 cantaloupe
1 apple
1 pear
1 cup grapes
1 cup berries (your choice)
Rinse all fruits under running water.
Cut cantaloupe in half, clean out seeds.
Cut into bite-size pieces or use a melon baller to form balls.
Cut apple and pear into bite-size pieces. Cut grapes and berries into four pieces.
Toss all fruit together. Serves 2-4.
Cranberry or Apple-Filled Acorn Squash
2 medium squash
1 15 oz. can whole cranberry sauce or
1 15 oz. can unsweetened applesauce (recommend chunky style)
Cinnamon
Cut squash in half; remove seeds.
Cover with plastic wrap and microwave on high for 4 minutes; rearrange squash, then microwave for 3-5 minutes. Fill each squash half with ¼ cup cranberry sauce or applesauce. Sprinkle with cinnamon. Microwave on high for 1-2 minutes.
Serves 4.
Alternate cooking directions:
Place squash cut sides up in an ungreased baking pan. Pour water into dish to ¼ inch depth. Cover and cook until tender in 400 degree oven for 30-40 minutes. Fill each squash half with fruit as described above and return to oven for additional 6-8 minutes.
Italian Broccoli with Tomatoes
4 cups fresh broccoli flowerets
½ cup water
½ tsp. oregano or Italian seasoning
1/8 tsp. pepper
2 medium tomatoes, cut into wedges
½ cup shredded mozzarella cheese
Put broccoli and water in 2 qt. casserole. Microwave on high 5-6 minutes. Drain. Stir in seasonings and tomatoes. Microwave on high 2-3 minutes. Sprinkle with cheese, and microwave for 1 minute or until cheese melts. Serves 4-6.
